Every month a seasonal vegetarian/vegan recipe will be featured from
Sukha's collection of favorites. Hopefully these recipes will help you to
incorporate more healthy vegetarian fare into your diet.
Summer Ratatouille
This dish is meant to serve as a baseline for using all the excellent produce that you have available to you.
Essential ingredients
Olive oil
Onions
Garlic
Corn
Fresh Basil or Sage
Salt and fresh ground pepper
Optional ingredients
Broccoli
Zucchini
Peppers
Tomatoes
Green or Yellow Beans
Eggplant
Pattypan squash
Carrots
Chickpeas (if you want to make it a meal)
1. Heat 1-2 Tbsp of olive oil over medium heat in a non stick pan.
2. Saute onions until tender. Then add all other ingredients except fresh herbs.
3. Cover and stir frequently until vegetables are tender. Cooking time will vary based on ingredients used.
4. Season with fresh herbs, salt and pepper and cook an additional 2 minutes.
